Banana Protein Pancakes (Gluten-Free)

I love this recipe because it’s delicious and packs a protein punch! It’s also very simple, and you can reuse many of the items a number of times, making it extremely cost effective.

Ingredients

  • 1 1/4 cup blanched almond flour
  • 1 tablespoon flaxseed
  • 1/2 scoop Vega Protein
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1 cup full almond milk
  • 1 ripe banana, mashed (about 1/2 cup)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon raw honey (optional)
  • coconut oil, ghee or butter for frying
  • maple syrup
  • fruit topping

Whisk flour, flaxseed, protein powder, baking soda, sea salt, almond milk, mashed banana, eggs, and vanilla together in a large bowl. Heat coconut oil, ghee or butter in a pan. Once the oil or butter has melted, slowly pour the batter into the pan in small circles, about two to two and a half inches thick. Once the batter starts to bubble, flip the pancakes and remove from head once cooked all the way through.

Add fruit topping, syrup and enjoy!
